Māori Hangi-inspired Lamb Curry (Kōpī Kari)

Ingredients

  • 1 kg lamb shoulder, cubed
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 2 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 400g canned tomatoes
  • 2 cups beef or vegetable broth
  • 2 large potatoes, peeled and cubed
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, brown the lamb over medium heat.
  2. Add the onions and garlic, and cook until softened.
  3. Stir in the curry powder, cumin, coriander, and turmeric, and cook for 1-2 minutes.
  4. Pour in the canned tomatoes and broth, then add the potatoes. Season with salt and pepper.
  5. Cover and simmer for 1.5-2 hours, or until the lamb is tender and the sauce has thickened.
  6. Garnish with fresh cilantro before serving.
