Māori Hangi-inspired Lamb Curry (Kōpī Kari)

Ingredients
- 1 kg lamb shoulder, cubed
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 2 tbsp curry powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp turmeric
- 400g canned tomatoes
- 2 cups beef or vegetable broth
- 2 large potatoes, peeled and cubed
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, brown the lamb over medium heat.
- Add the onions and garlic, and cook until softened.
- Stir in the curry powder, cumin, coriander, and turmeric, and cook for 1-2 minutes.
- Pour in the canned tomatoes and broth, then add the potatoes. Season with salt and pepper.
- Cover and simmer for 1.5-2 hours, or until the lamb is tender and the sauce has thickened.
- Garnish with fresh cilantro before serving.
