Māori Potato and Spinach Curry (Rīwai Kōrihi Kari)

Ingredients

  • 4 large potatoes, peeled and cubed
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 can (400g) diced tomatoes
  • 2 cups fresh spinach leaves
  • Salt to taste
  • 2 tablespoons oil
  • 1 cup water

Instructions

  1. In a large pot, heat the oil over medium heat. Add the chopped onion and cook until soft.
  2. Add the minced garlic, curry powder, cumin, coriander, turmeric, and cayenne pepper. Stir well and cook for 2 minutes.
  3. Add the diced potatoes and stir to coat with the spices. Pour in the diced tomatoes and water. Season with salt, cover, and simmer for 15-20 minutes or until the potatoes are tender.
  4. Add the fresh spinach leaves to the pot and stir until wilted.
