Ingredients
- 4 large potatoes, peeled and cubed
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 1 can (400g) diced tomatoes
- 2 cups fresh spinach leaves
- Salt to taste
- 2 tablespoons oil
- 1 cup water
Instructions
- In a large pot, heat the oil over medium heat. Add the chopped onion and cook until soft.
- Add the minced garlic, curry powder, cumin, coriander, turmeric, and cayenne pepper. Stir well and cook for 2 minutes.
- Add the diced potatoes and stir to coat with the spices. Pour in the diced tomatoes and water. Season with salt, cover, and simmer for 15-20 minutes or until the potatoes are tender.
- Add the fresh spinach leaves to the pot and stir until wilted.
- Adjust the seasoning if needed and serve the Rīwai Kōrihi Kari hot with rice or naan bread.
