Ingredients

  • 4 chicken thighs
  • 4 large potatoes, peeled and sliced
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken thighs with salt, pepper, paprika, and thyme.
  3. Heat olive oil in a large skillet over medium-high heat. Brown the chicken thighs on both sides, about 3-4 minutes per side. Remove from the skillet and set aside.
  4. In the same skillet, sauté the onion and garlic until softened.
  5. Layer the sliced potatoes in a baking dish. Place the browned chicken thighs on top of the potatoes.
  6. Pour the sautéed onion and garlic over the chicken and potatoes. Pour the chicken broth into the baking dish.
  7. Cover the baking dish with foil and bake in the preheated oven for 45 minutes.
  8. Remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and the potatoes are tender.
  9. Serve hot and enjoy!
