Morija Chicken And Potato Bake
This Morija Chicken and Potato Bake is a delicious and hearty dish from the cuisine of Lesotho. It's a perfect comfort food for a cozy family dinner or a gathering with friends.
Ingredients
- 4 chicken thighs
- 4 large potatoes, peeled and sliced
- 1 onion, sliced
- 2 garlic cloves, minced
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 cup chicken broth
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken thighs with salt, pepper, paprika, and thyme.
- Heat olive oil in a large skillet over medium-high heat. Brown the chicken thighs on both sides, about 3-4 minutes per side. Remove from the skillet and set aside.
- In the same skillet, sauté the onion and garlic until softened.
- Layer the sliced potatoes in a baking dish. Place the browned chicken thighs on top of the potatoes.
- Pour the sautéed onion and garlic over the chicken and potatoes. Pour the chicken broth into the baking dish.
- Cover the baking dish with foil and bake in the preheated oven for 45 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and the potatoes are tender.
- Serve hot and enjoy!
