Ingredients

  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 cup diced tomatoes
  • 2 cups mixed vegetables (such as carrots, potatoes, and peas)
  • 1 cup coconut milk
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
