Ingredients
- 1 lb lamb, cubed
- 1 cup brown lentils
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 6 cups beef or vegetable broth
- 1 tsp ground cumin
- 1 tsp ground coriander
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the lamb and cook until browned on all sides.
- Add the chopped onion, carrots, celery, and garlic to the pot. Cook for 5 minutes, stirring occasionally.
- Stir in the lentils, cumin, and coriander. Season with salt and pepper.
- Pour in the broth and bring the soup to a boil. Reduce the heat and simmer for 45-50 minutes, or until the lamb and lentils are tender.
- Adjust the seasoning if needed and serve hot.
