Moroccan Chermoula Grilled Shrimp Skewers

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • 8 wooden or metal skewers

Instructions

  1. In a bowl, combine the cilantro, parsley, garlic, cumin, paprika, coriander, cayenne pepper, olive oil, and lemon juice to make the chermoula marinade.
  2. Add the shrimp to the marinade and toss to coat. Cover and refrigerate for at least 15 minutes.
  3. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated shrimp onto the skewers, dividing equally.
  6. Season the shrimp with salt and pepper.
