Moroccan Chickpea and Spinach Stew (Tagine B'stilla)
Tagine B'stilla is a traditional Mizrahi Jewish dish that features a flavorful combination of chickpeas, spinach, and aromatic spices. This hearty stew is perfect for a comforting and satisfying meal.
Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground turmeric
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 4 cups fresh spinach
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh parsley
- 4 sheets phyllo dough
- 2 tablespoons melted vegan butter
- 1 tablespoon powdered sugar
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until softened, about 5 minutes.
- Add the minced garlic, ground cumin, coriander, cinnamon, ginger, and turmeric to the pot. Cook for 1-2 minutes until fragrant.
- Stir in the chickpeas and diced tomatoes. Simmer for 15 minutes, stirring occasionally.
- Add the fresh spinach to the pot and cook until wilted, about 3-5 minutes. Season with salt and pepper to taste.
- Stir in the chopped cilantro and parsley. Remove the pot from the heat and set aside.
- Preheat the oven to 375°F (190°C). Lay out one sheet of phyllo dough and brush it with melted vegan butter. Repeat with the remaining sheets, stacking them on top of each other.
- Spoon the chickpea and spinach stew onto the center of the phyllo stack. Fold the edges of the phyllo over the filling to create a sealed packet.
- Place the packet on a baking sheet and bake for 15-20 minutes, or until the phyllo is golden and crispy.
- Remove the tagine b'stilla from the oven and dust with powdered sugar. Serve hot and enjoy!
