Moroccan Chickpea and Spinach Stew (Tagine B'stilla)

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground turmeric
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14 oz) diced tomatoes
  • 4 cups fresh spinach
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • 4 sheets phyllo dough
  • 2 tablespoons melted vegan butter
  • 1 tablespoon powdered sugar

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until softened, about 5 minutes.
  2. Add the minced garlic, ground cumin, coriander, cinnamon, ginger, and turmeric to the pot. Cook for 1-2 minutes until fragrant.
  3. Stir in the chickpeas and diced tomatoes. Simmer for 15 minutes, stirring occasionally.
  4. Add the fresh spinach to the pot and cook until wilted, about 3-5 minutes. Season with salt and pepper to taste.
  5. Stir in the chopped cilantro and parsley. Remove the pot from the heat and set aside.
  6. Preheat the oven to 375°F (190°C). Lay out one sheet of phyllo dough and brush it with melted vegan butter. Repeat with the remaining sheets, stacking them on top of each other.
  7. Spoon the chickpea and spinach stew onto the center of the phyllo stack. Fold the edges of the phyllo over the filling to create a sealed packet.
  8. Place the packet on a baking sheet and bake for 15-20 minutes, or until the phyllo is golden and crispy.
  9. Remove the tagine b'stilla from the oven and dust with powdered sugar. Serve hot and enjoy!
