Ingredients

  • 1 lb lamb, cut into cubes
  • 2 cups couscous
  • 1 onion, chopped
  • 2 carrots, sliced
  • 1 zucchini, diced
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground turmeric
  • Salt and pepper to taste
  • 4 cups chicken or vegetable broth
  • 1/4 cup chopped fresh cilantro

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the lamb cubes and cook until browned on all sides.
  2. Add the chopped onion and minced garlic to the pot, and sauté until the onion is translucent.
  3. Stir in the ground cumin, coriander, cinnamon, turmeric, salt, and pepper, and cook for 1-2 minutes to toast the spices.
