Ingredients
- 1 lb lamb, cut into cubes
- 2 cups couscous
- 1 onion, chopped
- 2 carrots, sliced
- 1 zucchini, diced
- 1 red bell pepper, chopped
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/4 tsp ground turmeric
- Salt and pepper to taste
- 4 cups chicken or vegetable broth
- 1/4 cup chopped fresh cilantro
Instructions
- In a large pot, heat the olive oil over medium heat. Add the lamb cubes and cook until browned on all sides.
- Add the chopped onion and minced garlic to the pot, and sauté until the onion is translucent.
- Stir in the ground cumin, coriander, cinnamon, turmeric, salt, and pepper, and cook for 1-2 minutes to toast the spices.
- Pour in the chicken or vegetable broth and bring to a boil. Reduce the heat, cover, and simmer for 30 minutes.
- Add the carrots, zucchini, and red bell pepper to the pot, and continue to simmer for an additional 15 minutes.
- Stir in the couscous, cover the pot, and remove from heat. Let it sit for 5 minutes to allow the couscous to absorb the liquid.
- Fluff the couscous with a fork, and stir in the chopped cilantro. Adjust the seasoning if needed.
