Moroccan Lentil And Vegetable Tagine

Ingredients

  • 1 cup dried lentils
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 zucchinis, diced
  • 1 red bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 3 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground turmeric
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the carrots, zucchinis, and red bell pepper to the pot. Cook for 5 minutes, stirring occasionally.
  3. Stir in the diced tomatoes, vegetable broth, lentils, cumin, coriander, cinnamon, turmeric, salt, and pepper. Bring the mixture to a boil.
