Ingredients
- 1 cup dried lentils
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 zucchinis, diced
- 1 red bell pepper, diced
- 1 can (14 oz) diced tomatoes
- 3 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground turmeric
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the carrots, zucchinis, and red bell pepper to the pot. Cook for 5 minutes, stirring occasionally.
- Stir in the diced tomatoes, vegetable broth, lentils, cumin, coriander, cinnamon, turmeric, salt, and pepper. Bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and simmer for 30 minutes, or until the lentils and vegetables are tender.
- Adjust the seasoning if needed. Serve the tagine hot, garnished with fresh cilantro.
