Ingredients
- 1 cup dried lentils
- 1 onion, chopped
- 3 carrots, diced
- 3 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth

- 1 tsp ground turmeric
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- Salt and pepper to taste

Instructions
- Rinse the lentils and set aside.

- Stir in the diced tomatoes, vegetable broth, lentils, and spices. Bring the soup to a boil, then reduce the heat and let it simmer for 45-50 minutes, or until the lentils are tender.
