Ingredients

  • 1 cup quinoa
  • 2 cups water

  • 1/4 cup lemon juice

  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon

  • 1/2 cup chopped fresh parsley

  • 1/2 cup chopped red onion
  • 1/2 cup chopped cucumber
  • Salt and pepper to taste

Instructions
