Ingredients
- 1 cup quinoa
- 2 cups water
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/4 tsp cayenne pepper
- 1/2 cup chopped fresh parsley
- 1/2 cup chopped fresh mint
- 1/2 cup chopped red onion
- 1/2 cup chopped cucumber
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a saucepan, combine the quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes.
- In a small bowl, whisk together the olive oil, lemon juice, cumin, coriander, cinnamon, and cayenne pepper.
- Once the quinoa is cooked, fluff it with a fork and transfer to a large bowl.
- Pour the dressing over the quinoa and toss to combine.
- Add the parsley, mint, red onion, and cucumber to the quinoa and toss to combine.
- Season with salt and pepper to taste.
- Refrigerate for at least 30 minutes before serving.
