Moroccan Spiced Rice Pilaf (Pilaf de Riz aux Épices Marocaines)

Ingredients

  • 2 cups basmati rice
  • 3 1/2 cups vegetable broth

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic and spices (cumin, coriander, turmeric, cinnamon, ginger, cayenne pepper) to the pot. Stir and cook for 1-2 minutes until fragrant.
  3. Stir in the basmati rice and cook for 2-3 minutes, stirring constantly to coat the rice with the spices.
  4. Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  5. Fluff the cooked rice with a fork and gently fold in the mixed dried fruits and nuts. Season with salt and pepper to taste.
