Ingredients
- 2 cups basmati rice
- 3 1/2 cups vegetable broth
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin

- 1/2 teaspoon ground turmeric
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger

Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic and spices (cumin, coriander, turmeric, cinnamon, ginger, cayenne pepper) to the pot. Stir and cook for 1-2 minutes until fragrant.
- Stir in the basmati rice and cook for 2-3 minutes, stirring constantly to coat the rice with the spices.
- Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the cooked rice with a fork and gently fold in the mixed dried fruits and nuts. Season with salt and pepper to taste.
- Transfer the pilaf to a serving dish and garnish with additional nuts and dried fruits if desired. Serve hot and enjoy!
