Ingredients
- 1 1/2 lbs boneless lamb or 2 large eggplants, cubed
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground turmeric
- 1/4 tsp cayenne pepper
- 1 cup dried apricots
- 1/2 cup whole blanched almonds
- 2 cups chicken or vegetable broth
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a tagine or large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic and cook for another minute.
- If using lamb, add the cubed meat to the skillet and brown on all sides. If using eggplants, add them to the skillet and cook until they start to soften.
- Stir in the ground cumin, coriander, cinnamon, ginger, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Pour in the chicken or vegetable broth and add the dried apricots. Bring to a simmer and then reduce the heat to low. Cover and cook for 45 minutes to 1 hour, or until the meat is tender or the eggplants are fully cooked.
- While the tagine is cooking, toast the almonds in a dry skillet over medium heat until golden and fragrant.
- Once the tagine is ready, season with salt and pepper to taste. Serve the tagine garnished with the toasted almonds.
