Moroccan Tagine With Apricots And Almonds

Ingredients

  • 1 1/2 lbs boneless lamb or 2 large eggplants, cubed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground turmeric
  • 1/4 tsp cayenne pepper
  • 1 cup dried apricots
  • 1/2 cup whole blanched almonds
  • 2 cups chicken or vegetable broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a tagine or large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened.
  2. Add the minced garlic and cook for another minute.
  3. If using lamb, add the cubed meat to the skillet and brown on all sides. If using eggplants, add them to the skillet and cook until they start to soften.
  4. Stir in the ground cumin, coriander, cinnamon, ginger, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  5. Pour in the chicken or vegetable broth and add the dried apricots. Bring to a simmer and then reduce the heat to low. Cover and cook for 45 minutes to 1 hour, or until the meat is tender or the eggplants are fully cooked.
  6. While the tagine is cooking, toast the almonds in a dry skillet over medium heat until golden and fragrant.
  7. Once the tagine is ready, season with salt and pepper to taste. Serve the tagine garnished with the toasted almonds.
