Morogo Macarons
Morogo Macarons are a delightful fusion of traditional Botswana morogo (wild spinach) and the delicate French macaron. This unique recipe combines the earthy flavors of morogo with the sweet and airy texture of macarons, creating a one-of-a-kind treat that celebrates the best of both worlds.
Ingredients
- 1 cup morogo (wild spinach), blanched and finely chopped
- 1 3/4 cups powdered sugar
- 1 cup almond flour
- 3 large egg whites, room temperature
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- Green food coloring (optional)
Instructions
- In a large bowl, sift together the powdered sugar and almond flour. Add the finely chopped morogo and mix until well combined.
- In a separate bowl, beat the egg whites until foamy. Gradually add the granulated sugar and continue beating until stiff, glossy peaks form. Fold in the vanilla extract and green food coloring, if using.
- Gently fold the morogo mixture into the egg white mixture until the batter is smooth and shiny.
- Transfer the batter to a piping bag fitted with a round tip. Pipe small rounds onto a baking sheet lined with parchment paper.
- Let the macarons sit at room temperature for 30 minutes to form a skin.
- Preheat the oven to 300°F (150°C). Bake the macarons for 15 minutes, rotating the baking sheet halfway through the baking time.
- Remove from the oven and let the macarons cool completely on the baking sheet before carefully removing them.
- Pair up the macaron shells based on size, then fill with your choice of morogo-infused ganache or buttercream.
- Assemble the macarons and refrigerate for 24 hours to allow the flavors to meld together.
