Ingredients
- 2 cups cooked morogo (wild spinach)
- 2 cups sushi rice
- 4 nori seaweed sheets
- 1 cucumber, julienned
- 1 carrot, julienned
- 1 avocado, sliced
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- Soy sauce, for serving
- Pickled ginger, for serving
- Wasabi, for serving
Instructions
- Cook the sushi rice according to package instructions and let it cool.
- In a small saucepan, combine the rice vinegar, sugar, and salt. Heat over low heat until the sugar dissolves. Remove from heat and let it cool.
- Once the rice is cooled, gently fold in the seasoned rice vinegar to the rice to make sushi rice.
- Place a nori sheet on a bamboo sushi mat. Spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.
- Arrange a line of morogo, cucumber, carrot, and avocado along the bottom edge of the nori.
- Roll the nori and rice over the filling, using the bamboo mat to shape it into a tight cylinder.
- Slice the roll into 6-8 pieces using a sharp knife.
- Repeat with the remaining nori, rice, and fillings.
- Serve the Morogo Maki Rolls with soy sauce, pickled ginger, and wasabi.
