Ingredients

  • 2 cups cooked morogo (wild spinach)
  • 2 cups sushi rice
  • 4 nori seaweed sheets
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • 1 avocado, sliced
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • Soy sauce, for serving
  • Pickled ginger, for serving
  • Wasabi, for serving

Instructions

  1. Cook the sushi rice according to package instructions and let it cool.
  2. In a small saucepan, combine the rice vinegar, sugar, and salt. Heat over low heat until the sugar dissolves. Remove from heat and let it cool.
  3. Once the rice is cooled, gently fold in the seasoned rice vinegar to the rice to make sushi rice.
  4. Place a nori sheet on a bamboo sushi mat. Spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.
  5. Arrange a line of morogo, cucumber, carrot, and avocado along the bottom edge of the nori.
  6. Roll the nori and rice over the filling, using the bamboo mat to shape it into a tight cylinder.
  7. Slice the roll into 6-8 pieces using a sharp knife.
  8. Repeat with the remaining nori, rice, and fillings.
  9. Serve the Morogo Maki Rolls with soy sauce, pickled ginger, and wasabi.
