Morogo Mousse

Ingredients

  • 500g morogo (African spinach)
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup grated cheese
  • Salt and pepper to taste

Instructions

  1. Wash the morogo thoroughly and blanch in boiling water for 5 minutes. Drain and chop finely.
  2. In a pan, sauté the onion and garlic until soft. Add the tomatoes and cook until they soften.
  3. Add the chopped morogo to the pan and cook for 5 minutes, stirring occasionally.
  4. Pour in the heavy cream and simmer for 10 minutes. Season with salt and pepper.
  5. Remove from heat and let it cool slightly. Transfer the mixture to a blender and blend until smooth.
  6. Stir in the grated cheese until well combined.
  7. Divide the morogo mousse into serving dishes and refrigerate for at least 2 hours before serving.
