Morogo Mousse
Morogo Mousse is a traditional dish from Botswana made with nutritious and flavorful morogo, also known as African spinach. This creamy and savory mousse is a delightful way to enjoy this indigenous leafy green.
Ingredients
- 500g morogo (African spinach)
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 garlic cloves, minced
- 1 cup heavy cream
- 1/2 cup grated cheese
- Salt and pepper to taste
Instructions
- Wash the morogo thoroughly and blanch in boiling water for 5 minutes. Drain and chop finely.
- In a pan, sauté the onion and garlic until soft. Add the tomatoes and cook until they soften.
- Add the chopped morogo to the pan and cook for 5 minutes, stirring occasionally.
- Pour in the heavy cream and simmer for 10 minutes. Season with salt and pepper.
- Remove from heat and let it cool slightly. Transfer the mixture to a blender and blend until smooth.
- Stir in the grated cheese until well combined.
- Divide the morogo mousse into serving dishes and refrigerate for at least 2 hours before serving.
