Ingredients

  • 2 lbs beef, cut into cubes
  • 4 leeks, sliced
  • 1 cup red wine
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 4 cloves garlic, minced
  • 1 cinnamon stick
  • 4-5 whole cloves
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the beef cubes and brown on all sides.
  3. Add the leeks and garlic, and cook until softened.
  4. Pour in the red wine and red wine vinegar, and add the cinnamon stick, cloves, and bay leaf.
  5. Season with salt and pepper, then cover and simmer for 2 hours, or until the beef is tender.
  6. Serve the stifado hot, with crusty bread or over rice.
