Moschari stifado me prasa is a traditional Epirotic beef and leek stew that is rich in flavor and perfect for a comforting meal.
Ingredients
- 2 lbs beef, cut into cubes
- 4 leeks, sliced
- 1 cup red wine
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 4 cloves garlic, minced
- 1 cinnamon stick
- 4-5 whole cloves
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the beef cubes and brown on all sides.
- Add the leeks and garlic, and cook until softened.
- Pour in the red wine and red wine vinegar, and add the cinnamon stick, cloves, and bay leaf.
- Season with salt and pepper, then cover and simmer for 2 hours, or until the beef is tender.
- Serve the stifado hot, with crusty bread or over rice.
