Ingredients

  • 2 cups basmati rice
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened.
  2. Add the minced garlic, diced carrots, ground cumin, ground coriander, and ground turmeric. Cook for 2-3 minutes until the spices are fragrant.
  3. Stir in the basmati rice and cook for another 2-3 minutes to toast the rice.
  4. Add the drained chickpeas and vegetable broth to the pot. Season with salt and pepper to taste. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes until the rice is cooked and the liquid is absorbed.
