Moshkichiri (fluffy Rice And Chickpea Pilaf)
Moshkichiri is a traditional Uzbek dish that combines fluffy rice and hearty chickpeas in a flavorful pilaf. This dish is a staple in Uzbek cuisine and is perfect for a comforting and satisfying meal.
Ingredients
- 2 cups basmati rice
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 4 cups vegetable broth
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic, diced carrots, ground cumin, ground coriander, and ground turmeric. Cook for 2-3 minutes until the spices are fragrant.
- Stir in the basmati rice and cook for another 2-3 minutes to toast the rice.
- Add the drained chickpeas and vegetable broth to the pot. Season with salt and pepper to taste. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes until the rice is cooked and the liquid is absorbed.
- Fluff the rice and chickpea pilaf with a fork before serving. Enjoy!
