Ingredients

  • 2 cups basmati rice
  • 2 large potatoes, peeled and cubed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic, ground cumin, ground coriander, and ground turmeric. Cook for 1-2 minutes until fragrant.
  3. Add the cubed potatoes to the pot and cook for 5 minutes, stirring occasionally.
  4. Rinse the basmati rice under cold water until the water runs clear. Add the rice to the pot and stir to combine with the potatoes and onions.
  5. Pour in the vegetable broth and season with salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
  6. Fluff the moshkichiri with a fork before serving. Enjoy hot!
