Moshkichiri (fluffy Rice And Potato Pilaf)
Moshkichiri is a traditional Uzbek dish that combines fluffy rice and tender potatoes in a flavorful pilaf. This comforting and hearty dish is perfect for a satisfying meal any time of the year.
Ingredients
- 2 cups basmati rice
- 2 large potatoes, peeled and cubed
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic, ground cumin, ground coriander, and ground turmeric. Cook for 1-2 minutes until fragrant.
- Add the cubed potatoes to the pot and cook for 5 minutes, stirring occasionally.
- Rinse the basmati rice under cold water until the water runs clear. Add the rice to the pot and stir to combine with the potatoes and onions.
- Pour in the vegetable broth and season with salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
- Fluff the moshkichiri with a fork before serving. Enjoy hot!
