Ingredients

  • 2 cups basmati rice
  • 2 cups diced pumpkin
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 4 cups vegetable broth
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the cumin seeds and cook until they start to sizzle.
  2. Add the chopped onion and minced garlic to the pot. Sauté until the onion is soft and translucent.
  3. Stir in the ground coriander and turmeric, then add the diced pumpkin. Cook for 5 minutes, stirring occasionally.
  4. Wash the basmati rice under cold water until the water runs clear. Drain the rice and add it to the pot with the pumpkin and spices. Stir to combine.
  5. Pour in the vegetable broth and season with salt and pepper. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the moshkichiri simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
