Moshkichiri (fluffy Rice And Pumpkin Pilaf)
Moshkichiri is a traditional Uzbek dish that combines fluffy rice and sweet pumpkin in a delightful pilaf. This hearty and flavorful dish is perfect for a cozy family dinner or a special occasion.
Ingredients
- 2 cups basmati rice
- 2 cups diced pumpkin
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon cumin seeds
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 4 cups vegetable broth
- Salt to taste
- Pepper to taste
- 2 tablespoons vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the cumin seeds and cook until they start to sizzle.
- Add the chopped onion and minced garlic to the pot. Sauté until the onion is soft and translucent.
- Stir in the ground coriander and turmeric, then add the diced pumpkin. Cook for 5 minutes, stirring occasionally.
- Wash the basmati rice under cold water until the water runs clear. Drain the rice and add it to the pot with the pumpkin and spices. Stir to combine.
- Pour in the vegetable broth and season with salt and pepper. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the moshkichiri simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
