Ingredients

  • 2 cups long-grain rice
  • 4 cups water
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 4 cups fresh spinach, chopped
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the cumin seeds, ground coriander, and ground turmeric, and cook for 1-2 minutes until fragrant.
  4. Add the rice to the pot and stir to coat the grains with the onion and spice mixture.
  5. Pour in the water and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes.
  6. Stir in the chopped spinach, cover, and continue to cook for an additional 5-7 minutes until the rice is tender and the spinach is wilted.
  7. Season with salt and black pepper to taste.
  8. Fluff the moshkichiri with a fork before serving.
