Moshkichiri (fluffy Rice And Spinach Pilaf)
Moshkichiri is a traditional Uzbek dish that combines fluffy rice with flavorful spinach, creating a delicious and nutritious pilaf.
Ingredients
- 2 cups long-grain rice
- 4 cups water
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin seeds
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 4 cups fresh spinach, chopped
- Salt to taste
- Black pepper to taste
- 2 tablespoons vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the cumin seeds, ground coriander, and ground turmeric, and cook for 1-2 minutes until fragrant.
- Add the rice to the pot and stir to coat the grains with the onion and spice mixture.
- Pour in the water and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes.
- Stir in the chopped spinach, cover, and continue to cook for an additional 5-7 minutes until the rice is tender and the spinach is wilted.
- Season with salt and black pepper to taste.
- Fluff the moshkichiri with a fork before serving.
