Ingredients

  • 4 large bell peppers
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • 1/2 cup beef or vegetable broth
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, mix together the ground beef, cooked rice, onion, garlic, diced tomatoes, paprika, oregano, salt, and pepper.
  4. Stuff the bell peppers with the meat and rice mixture.
  5. Place the stuffed peppers in a deep skillet or baking dish.
  6. Pour the beef or vegetable broth over the stuffed peppers and drizzle with olive oil.
  7. Cover the skillet or baking dish with a lid or foil and cook on the stovetop over medium heat for 45-50 minutes, or bake in the preheated oven for 45-50 minutes, until the peppers are tender and the filling is cooked through.
  8. Serve the Mostarske Punjene Paprike hot, garnished with fresh parsley if desired.
