Mountain Delight (Delícia de Muntanya)
Delícia de Muntanya, or Mountain Delight, is a traditional Andorran dish that captures the essence of the beautiful Pyrenees mountains. This hearty and flavorful recipe is perfect for a cozy evening in, bringing the warmth of Andorran cuisine to your table.
Ingredients
- 500g lamb, cubed
- 2 onions, chopped
- 3 garlic cloves, minced
- 4 tomatoes, diced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 200g white beans
- 2 bay leaves
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the lamb cubes and brown them on all sides.
- Add the onions and garlic, and sauté until softened.
- Stir in the tomatoes, bell peppers, white beans, bay leaves, paprika, cayenne pepper, salt, and pepper.
- Cover the pot and let the stew simmer for 1 hour, stirring occasionally.
- Once the lamb is tender and the flavors have melded, remove the bay leaves and serve hot.
