Mountain Delight (Delícia de Muntanya)

Ingredients

  • 500g lamb, cubed
  • 2 onions, chopped
  • 3 garlic cloves, minced
  • 4 tomatoes, diced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 200g white beans
  • 2 bay leaves
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the lamb cubes and brown them on all sides.
  3. Add the onions and garlic, and sauté until softened.
  4. Stir in the tomatoes, bell peppers, white beans, bay leaves, paprika, cayenne pepper, salt, and pepper.
  5. Cover the pot and let the stew simmer for 1 hour, stirring occasionally.
  6. Once the lamb is tender and the flavors have melded, remove the bay leaves and serve hot.
