Ingredients

  • 1 kg lamb, cut into chunks
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 3 large carrots, sliced
  • 4 potatoes, diced
  • 1 can (400g) diced tomatoes
  • 4 cups beef broth
  • 2 bay leaves
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, brown the lamb chunks over medium heat.
  2. Add the onions and garlic, and cook until softened.
  3. Stir in the carrots, potatoes, diced tomatoes, and beef broth.
  4. Add the bay leaves, paprika, cumin, salt, and pepper.
  5. Simmer the stew for 2 hours, stirring occasionally, until the lamb is tender.
  6. Remove the bay leaves and serve the stew hot, garnished with fresh parsley.
