Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 1/4 cup ice water
- 2 tablespoons olive oil
- 1 pound mixed mushrooms, sliced
- 2 garlic cloves, minced
- 1 tablespoon fresh thyme leaves
- Salt and pepper to taste
- 1 cup shredded Gruyère cheese
- 1 egg, beaten (for egg wash)
Instructions
- In a large bowl, combine the flour and salt. Add the cold butter and mix until the mixture resembles coarse crumbs.
- Gradually add the ice water and mix until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat. Add the mushrooms and garlic, and cook until the mushrooms are golden brown. Stir in the thyme, salt, and pepper. Remove from heat and let it cool.
- On a floured surface, roll out the dough into a 12-inch circle. Transfer the dough to a baking sheet lined with parchment paper.
- Sprinkle half of the Gruyère cheese on the dough, leaving a 2-inch border. Spread the mushroom mixture over the cheese. Fold the edges of the dough over the filling, pleating as needed.
- Brush the dough with the beaten egg and sprinkle the remaining Gruyère cheese on top.
- Bake for 30-35 minutes, or until the crust is golden brown. Let it cool for a few minutes before serving.
