Mourne Mountain Mushroom Risotto

Ingredients

  • 1 1/2 cups Arborio rice
  • 4 cups vegetable broth
  • 1 cup white wine
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mixed mushrooms, sliced
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp butter
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable broth and keep it warm over low heat.
  2. In a separate pan, heat the olive oil and sauté the onions and garlic until translucent.
  3. Add the Arborio rice to the pan and stir to coat the grains with the oil.
  4. Pour in the white wine and cook until it has been absorbed by the rice.
  5. Begin adding the warm vegetable broth, one ladle at a time, stirring constantly and allowing each addition to be absorbed before adding the next.
  6. After about 18 minutes, add the sliced mushrooms to the risotto and continue adding broth until the rice is creamy and al dente.
  7. Stir in the butter and Parmesan cheese, and season with salt and pepper.
  8. Remove from heat and let the risotto rest for a few minutes before serving.
