Mourne Mountain Mushroom Risotto
Mourne Mountain Mushroom Risotto is a traditional Northern Irish dish that brings together the earthy flavors of mushrooms with creamy Arborio rice. This comforting and hearty dish is perfect for a cozy night in or a special dinner with loved ones.
Ingredients
- 1 1/2 cups Arborio rice
- 4 cups vegetable broth
- 1 cup white wine
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 8 oz mixed mushrooms, sliced
- 1/2 cup grated Parmesan cheese
- 2 tbsp butter
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable broth and keep it warm over low heat.
- In a separate pan, heat the olive oil and sauté the onions and garlic until translucent.
- Add the Arborio rice to the pan and stir to coat the grains with the oil.
- Pour in the white wine and cook until it has been absorbed by the rice.
- Begin adding the warm vegetable broth, one ladle at a time, stirring constantly and allowing each addition to be absorbed before adding the next.
- After about 18 minutes, add the sliced mushrooms to the risotto and continue adding broth until the rice is creamy and al dente.
- Stir in the butter and Parmesan cheese, and season with salt and pepper.
- Remove from heat and let the risotto rest for a few minutes before serving.
