Mourne Mountain Venison And Guinness Casserole
This hearty Mourne Mountain Venison and Guinness Casserole is a traditional Northern Irish dish that combines the rich flavors of venison with the deep, malty taste of Guinness. It's a perfect comfort food for a cozy evening at home.
Ingredients
- 2 lbs venison, cubed
- 2 tbsp vegetable oil
- 2 onions, chopped
- 3 carrots, sliced
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 2 tbsp all-purpose flour
- 1 can (14.9 oz) Guinness stout
- 2 cups beef broth
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium-high heat. Add the venison and cook until browned on all sides. Remove the venison from the pot and set aside.
- Lower the heat to medium and add the onions, carrots, and celery to the pot. Cook for 5 minutes until the vegetables start to soften.
- Add the garlic and cook for an additional 2 minutes.
- Sprinkle the flour over the vegetables and stir to coat. Cook for 1 minute to remove the raw flour taste.
- Pour in the Guinness and beef broth, stirring to scrape up any browned bits from the bottom of the pot.
- Return the venison to the pot, add the bay leaves, and season with salt and pepper.
- Bring the casserole to a simmer, then cover and cook for 1.5 to 2 hours, or until the venison is tender.
- Remove the bay leaves before serving.
