Mousse Cake

Ingredients
- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup unsalted butter, melted
- 1 cup heavy cream
- 8 ounces semisweet chocolate, chopped
- 3 large eggs
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the cake crust.
- Bake the crust in the preheated oven for 10 minutes, then remove and let it cool.
- In a saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat and add the chopped chocolate. Stir until the chocolate is completely melted and the mixture is smooth. Let it cool slightly.
- In a separate bowl, beat the eggs, sugar, and vanilla extract until light and fluffy.
- Gently fold the chocolate mixture into the egg mixture until well combined.
- Pour the mousse mixture over the cooled crust in the springform pan.
- Bake in the preheated oven for 15 minutes, then remove and let it cool to room temperature.
- Refrigerate the mousse cake for at least 4 hours, or overnight, before serving.
