Mouthwatering Plov with Chicken (Плов с курицей)

Ingredients

  • 2 cups jasmine rice
  • 1 lb chicken, cut into pieces
  • 2 large onions, thinly sliced
  • 3 carrots, julienned
  • 1/2 cup vegetable oil
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 1 tsp ground paprika
  • 1/2 tsp ground turmeric
  • 4 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the cumin seeds and coriander seeds, and cook until fragrant.
  2. Add the sliced onions and cook until golden brown.
  3. Add the chicken pieces and cook until browned on all sides.
  4. Stir in the rice, carrots, paprika, turmeric, salt, and pepper. Cook for 5 minutes, stirring occasionally.
  5. Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for 30-35 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Fluff the plov with a fork and serve hot.
