Ingredients
- 2 lbs fresh spinach, washed and chopped
- 1 cup groundnut paste
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 tablespoons palm oil
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 cups vegetable broth
Instructions
- In a large pot, heat the palm oil over medium heat.
- Add the chopped onions and sauté until translucent.
- Add the diced tomatoes and cook until they soften.
- Stir in the groundnut paste and cook for 5 minutes, stirring constantly.
- Pour in the vegetable broth and bring to a simmer.
- Add the chopped spinach, salt, and black pepper. Stir well to combine.
- Cover the pot and let the spinach stew for 20-25 minutes, stirring occasionally.
- Once the spinach is tender, adjust the seasoning if needed.
- Remove from heat and serve the Moyo hot.
