Ingredients

  • 2 lbs fresh spinach, washed and chopped
  • 1 cup groundnut paste
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 tablespoons palm oil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 cups vegetable broth

Instructions

  1. In a large pot, heat the palm oil over medium heat.
  2. Add the chopped onions and sauté until translucent.
  3. Add the diced tomatoes and cook until they soften.
  4. Stir in the groundnut paste and cook for 5 minutes, stirring constantly.
  5. Pour in the vegetable broth and bring to a simmer.
  6. Add the chopped spinach, salt, and black pepper. Stir well to combine.
  7. Cover the pot and let the spinach stew for 20-25 minutes, stirring occasionally.
  8. Once the spinach is tender, adjust the seasoning if needed.
