Mozambican Beef and Peanut Stew (Estufado de Carne e Amendoim Moçambicano)

Ingredients

  • 1.5 lbs beef, cut into cubes
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 cup crushed tomatoes
  • 1/2 cup peanut butter
  • 4 cups beef broth
  • 1/2 cup roasted peanuts
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the beef cubes and brown them on all sides. Remove the beef from the pot and set aside.
  2. In the same pot, add the chopped onion, minced garlic, and diced red bell pepper. Cook until the vegetables are softened.
  3. Return the browned beef to the pot and add the crushed tomatoes, peanut butter, and beef broth. Season with salt and pepper to taste.
  4. Bring the stew to a boil, then reduce the heat to low and let it simmer for 1.5 to 2 hours, or until the beef is tender.
  5. Stir in the roasted peanuts just before serving.
