Ingredients
- 1.5 lbs beef, cut into cubes
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 cup crushed tomatoes
- 1/2 cup peanut butter
- 4 cups beef broth
- 1/2 cup roasted peanuts
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the beef cubes and brown them on all sides. Remove the beef from the pot and set aside.
- In the same pot, add the chopped onion, minced garlic, and diced red bell pepper. Cook until the vegetables are softened.
- Return the browned beef to the pot and add the crushed tomatoes, peanut butter, and beef broth. Season with salt and pepper to taste.
- Bring the stew to a boil, then reduce the heat to low and let it simmer for 1.5 to 2 hours, or until the beef is tender.
- Stir in the roasted peanuts just before serving.
