Mozambican Beef and Potato Curry (Caril de Carne e Batata Moçambicano)

Ingredients
- 500g beef, cut into cubes
- 3 large potatoes, peeled and diced
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 2 tomatoes, chopped
- 2 tablespoons vegetable oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 400ml coconut milk
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the onions and garlic, and sauté until softened.
- Add the beef cubes to the pot and brown on all sides.
- Stir in the ground cumin, coriander, turmeric, paprika, and chili powder, and cook for 2 minutes to toast the spices.
- Add the diced potatoes, red bell pepper, and tomatoes to the pot, and stir to combine.
- Pour in the coconut milk and season with salt and pepper. Bring the curry to a simmer, then reduce the heat and cover the pot. Let it cook for 45-50 minutes, or until the beef is tender and the potatoes are cooked through.
- Once done, taste and adjust the seasoning if needed. Serve the Caril de Carne e Batata Moçambicano hot, garnished with fresh cilantro.
