Mozambican Beef and Potato Curry (Caril de Carne e Batata Moçambicano)

Ingredients

  • 500g beef, cut into cubes
  • 3 large potatoes, peeled and diced
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 2 tomatoes, chopped
  • 2 tablespoons vegetable oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 400ml coconut milk
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onions and garlic, and sauté until softened.
  2. Add the beef cubes to the pot and brown on all sides.
  3. Stir in the ground cumin, coriander, turmeric, paprika, and chili powder, and cook for 2 minutes to toast the spices.
  4. Add the diced potatoes, red bell pepper, and tomatoes to the pot, and stir to combine.
  5. Pour in the coconut milk and season with salt and pepper. Bring the curry to a simmer, then reduce the heat and cover the pot. Let it cook for 45-50 minutes, or until the beef is tender and the potatoes are cooked through.
  6. Once done, taste and adjust the seasoning if needed. Serve the Caril de Carne e Batata Moçambicano hot, garnished with fresh cilantro.
