Ingredients
- 500g beef, cut into cubes
- 2 large sweet potatoes, peeled and diced

- 1 red bell pepper, chopped
- 2 tomatoes, diced
- 2 tablespoons tomato paste
- 2 cups beef broth
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon turmeric
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the beef cubes and brown them on all sides. Remove the beef from the pot and set aside.
- In the same pot, add the chopped onion, garlic, and red bell pepper. Sauté until the vegetables are softened.
- Add the diced tomatoes, tomato paste, and spices. Stir to combine.
- Return the browned beef to the pot and pour in the beef broth. Bring to a boil, then reduce the heat to low and let it simmer for 1 hour.
- Add the diced sweet potatoes to the pot and continue to simmer for an additional 30-40 minutes, or until the beef is tender and the sweet potatoes are cooked through.
- Season with salt and pepper to taste.
