Ingredients
- 500g beef, thinly sliced
- 2 onions, finely chopped
- 3 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 tsp paprika
- 1 tsp cumin
- 1 cup beef broth
- 1 cup coconut milk
- 2 tbsp tomato paste
- Salt and pepper to taste
- 2 tbsp vegetable oil
- Cooked rice or pasta, for serving
Instructions
- Heat the vegetable oil in a large pan over medium heat. Add the onions and garlic, and cook until softened.
- Add the beef to the pan and cook until browned on all sides.
- Stir in the paprika, cumin, and red bell pepper, and cook for a few minutes.
- Pour in the beef broth, coconut milk, and tomato paste. Season with salt and pepper, then simmer for 20-25 minutes until the beef is tender and the sauce has thickened.
- Serve the beef stroganoff over cooked rice or pasta.
