Mozambican Chicken and Rice Casserole (Cassarola de Frango e Arroz Moçambicana)

Ingredients
- 2 lbs chicken, cut into pieces
- 2 cups rice
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 can (14 oz) diced tomatoes
- 2 cups chicken broth
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chicken pieces and brown them on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the chopped onion, garlic, and red bell pepper. Sauté until the vegetables are soft.
- Stir in the rice, diced tomatoes, chicken broth, paprika, cayenne pepper, salt, and pepper. Bring to a simmer.
- Return the browned chicken pieces to the pot, nestling them into the rice mixture. Cover and cook for 30-35 minutes, or until the rice is tender and the chicken is cooked through.
- Remove from heat and let it rest for 5 minutes before serving.
