Mozambican Chicken Pie (Empadão de Frango Moçambicano)

Ingredients

  • 2 lbs (900g) boneless, skinless chicken thighs
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 cup (120ml) chicken broth
  • 4 large potatoes, peeled and diced
  • 1/4 cup (60g) butter
  • 1/2 cup (120ml) milk
  • Salt and pepper to taste
  • 2 eggs, beaten

Instructions

  1. In a large pot, cook the chicken thighs, onion, and garlic over medium heat until the chicken is no longer pink.
  2. Stir in the cumin, paprika, and chicken broth. Simmer for 15 minutes, then remove from heat and shred the chicken.
  3. Meanwhile, boil the potatoes in a separate pot until tender. Drain and mash with butter, milk, salt, and pepper.
  4. Preheat the oven to 375°F (190°C).
  5. Spread half of the mashed potatoes in the bottom of a greased baking dish. Top with the shredded chicken mixture, then the remaining mashed potatoes.
  6. Brush the top with beaten eggs and bake for 30-35 minutes, or until golden brown.
  7. Serve the Mozambican Chicken Pie hot and enjoy!
