Mozambican Chicken Pie (Empadão de Frango Moçambicano)
Empadão de Frango Moçambicano, or Mozambican Chicken Pie, is a popular dish in Mozambican cuisine. This savory pie is filled with tender chicken, flavorful spices, and creamy mashed potatoes, making it a comforting and satisfying meal.
Ingredients
- 2 lbs (900g) boneless, skinless chicken thighs
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 cup (120ml) chicken broth
- 4 large potatoes, peeled and diced
- 1/4 cup (60g) butter
- 1/2 cup (120ml) milk
- Salt and pepper to taste
- 2 eggs, beaten
Instructions
- In a large pot, cook the chicken thighs, onion, and garlic over medium heat until the chicken is no longer pink.
- Stir in the cumin, paprika, and chicken broth. Simmer for 15 minutes, then remove from heat and shred the chicken.
- Meanwhile, boil the potatoes in a separate pot until tender. Drain and mash with butter, milk, salt, and pepper.
- Preheat the oven to 375°F (190°C).
- Spread half of the mashed potatoes in the bottom of a greased baking dish. Top with the shredded chicken mixture, then the remaining mashed potatoes.
- Brush the top with beaten eggs and bake for 30-35 minutes, or until golden brown.
- Serve the Mozambican Chicken Pie hot and enjoy!
