Ingredients
- 500g firm white fish fillets, cut into chunks
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tablespoon grated fresh ginger
- 2 tomatoes, chopped
- 1 can (400ml) coconut milk
- 1 tablespoon curry powder
- 1 teaspoon turmeric
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon chili flakes
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is soft and translucent.
- Add the chopped tomatoes to the pot and cook until they start to break down.
- Stir in the curry powder, turmeric, paprika, cumin, coriander, and chili flakes. Cook for 1-2 minutes to toast the spices.
- Pour in the coconut milk and bring the mixture to a gentle simmer.
- Add the fish chunks to the pot and gently stir to coat them with the curry sauce. Simmer for 10-15 minutes, or until the fish is cooked through.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro and serve the Caril de Peixe e Coco Moçambicano hot with steamed rice or crusty bread.
