Mozambican Fish and Coconut Curry (Caril de Peixe e Coco Moçambicano)

Ingredients

  • 500g firm white fish fillets, cut into chunks
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon grated fresh ginger
  • 2 tomatoes, chopped
  • 1 can (400ml) coconut milk
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon chili flakes
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is soft and translucent.
  2. Add the chopped tomatoes to the pot and cook until they start to break down.
  3. Stir in the curry powder, turmeric, paprika, cumin, coriander, and chili flakes. Cook for 1-2 minutes to toast the spices.
  4. Pour in the coconut milk and bring the mixture to a gentle simmer.
  5. Add the fish chunks to the pot and gently stir to coat them with the curry sauce. Simmer for 10-15 minutes, or until the fish is cooked through.
  6. Season with salt and pepper to taste.
