Mozambican Fish Cakes (Bolinhos de Peixe Moçambicanos)

Ingredients
- 500g fresh fish fillets, such as tilapia or snapper
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tablespoon fresh cilantro, chopped
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup all-purpose flour
- 2 eggs, beaten
- 1/4 cup vegetable oil, for frying
Instructions
- Boil the fish fillets in a pot of water for 5-7 minutes until cooked through. Drain and let cool.
- Flake the cooked fish into a large bowl and add the chopped onion, minced garlic, cilantro, paprika, cumin, salt, and black pepper. Mix well.
- Shape the fish mixture into small patties and coat each patty in flour, then dip in beaten eggs.
- Heat the vegetable oil in a large skillet over medium heat. Fry the fish cakes for 3-4 minutes on each side until golden brown and crispy.
- Remove the fish cakes from the skillet and place them on a paper towel to drain excess oil.
- Serve the Bolinhos de Peixe Moçambicanos hot with a side of spicy dipping sauce or a squeeze of fresh lemon juice.
