Ingredients
- 1 lb (450g) white fish fillets, cut into chunks
- 2 tbsp vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tbsp grated fresh ginger
- 1 red bell pepper, sliced
- 2 tomatoes, chopped
- 1 can (14 oz/400ml) coconut milk
- 2 tbsp curry powder
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger. Sauté for 2-3 minutes until fragrant.
- Add the sliced red bell pepper and chopped tomatoes to the pot. Cook for another 5 minutes until the vegetables are softened.
- Stir in the curry powder, turmeric, cumin, and paprika. Cook for 1-2 minutes to toast the spices.
- Pour in the coconut milk and bring the mixture to a gentle simmer.
- Add the fish chunks to the pot and gently stir to coat them with the sauce. Simmer for 10-15 minutes until the fish is cooked through.
- Season with salt and pepper to taste. Garnish with fresh cilantro before serving.
