Ingredients
- 1 kg fresh fish fillets, cut into chunks
- 2 onions, finely chopped
- 3 tomatoes, diced
- 3 cloves garlic, minced
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 2 cups fish stock
- 1 cup coconut milk
- 2 tablespoons palm oil
- 1 tablespoon ground paprika
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the palm oil over medium heat. Add the onions and garlic, and sauté until softened.
- Add the tomatoes, bell peppers, paprika, cumin, and coriander. Cook for 5 minutes, stirring occasionally.
- Pour in the fish stock and coconut milk. Bring to a simmer.
- Gently add the fish chunks to the pot. Season with salt and pepper. Cover and simmer for 20-25 minutes, or until the fish is cooked through.
- Adjust the seasoning if needed. Serve the stew hot, garnished with fresh cilantro.
