Mozambican Lamb Curry (Caril de Borrego Moçambicano)

Ingredients

  • 1 kg lamb, cut into cubes
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 1-inch ginger, grated
  • 2 tomatoes, chopped
  • 2 tbsp vegetable oil
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp paprika
  • 1 can (400ml) coconut milk
  • Salt to taste
  • Chopped fresh cilantro for garnish

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add the onions, garlic, and ginger. Sauté until the onions are soft and translucent.
  2. Add the lamb cubes to the pot and brown them on all sides.
  3. Stir in the curry powder, turmeric, cumin powder, coriander powder, and paprika. Cook for 2 minutes to toast the spices.
  4. Add the chopped tomatoes and cook until they are soft and pulpy.
  5. Pour in the coconut milk and season with salt. Bring the curry to a simmer, then reduce the heat and let it cook for 1 hour, stirring occasionally.
  6. Once the lamb is tender and the curry has thickened, remove from heat. Garnish with chopped cilantro before serving.
