Mozambican Lamb Curry (Caril de Borrego Moçambicano)

Ingredients
- 1 kg lamb, cut into cubes
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 1-inch ginger, grated
- 2 tomatoes, chopped
- 2 tbsp vegetable oil
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp paprika
- 1 can (400ml) coconut milk
- Salt to taste
- Chopped fresh cilantro for garnish
Instructions
- Heat vegetable oil in a large pot over medium heat. Add the onions, garlic, and ginger. Sauté until the onions are soft and translucent.
- Add the lamb cubes to the pot and brown them on all sides.
- Stir in the curry powder, turmeric, cumin powder, coriander powder, and paprika. Cook for 2 minutes to toast the spices.
- Add the chopped tomatoes and cook until they are soft and pulpy.
- Pour in the coconut milk and season with salt. Bring the curry to a simmer, then reduce the heat and let it cook for 1 hour, stirring occasionally.
- Once the lamb is tender and the curry has thickened, remove from heat. Garnish with chopped cilantro before serving.
