Ingredients
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
- 1 cup peanut butter
- 4 cups vegetable broth
- 2 large sweet potatoes, peeled and diced
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic, ground cumin, paprika, ground coriander, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Add the peanut butter and vegetable broth, stirring until the peanut butter is fully incorporated into the broth.
- Add the diced sweet potatoes to the pot and bring the stew to a simmer.
- Cover and cook for 30-40 minutes, or until the sweet potatoes are tender.
- Season with salt and pepper to taste.
