Mozambican Peanut Chicken Stew (Estufado de Frango com Amendoim Moçambicano)

Ingredients

  • 1.5 kg chicken, cut into pieces
  • 1 cup unsalted peanuts, finely ground
  • 2 onions, finely chopped
  • 3 tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tbsp vegetable oil
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp turmeric
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 3 cups chicken broth
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, and ginger, and sauté until the onions are soft and translucent.
  2. Add the chicken pieces to the pot and brown them on all sides.
  3. Stir in the ground peanuts, paprika, cumin, turmeric, cayenne pepper, salt, and pepper, and cook for 2-3 minutes.
  4. Add the chopped tomatoes and chicken broth to the pot. Bring the stew to a boil, then reduce the heat to low, cover, and simmer for 45-50 minutes, or until the chicken is tender.
  5. Adjust the seasoning if needed, and garnish with fresh cilantro before serving.
