Ingredients

  • 200g fresh mozuku seaweed
  • 1 cucumber, thinly sliced
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 1 teaspoon grated ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Soak the fresh mozuku seaweed in cold water for 10 minutes, then drain and squeeze out excess water.
  2. In a large bowl, combine the mozuku seaweed, sliced cucumber, rice vinegar, soy sauce, sesame oil, sugar, grated ginger, salt, and red pepper flakes. Toss to coat the ingredients evenly.
  3. Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld.
  4. Sprinkle toasted sesame seeds on top before serving.
