Ingredients
- 2 bundles of soba noodles
- 1 pack of dried mozuku seaweed
- 4 cups of dashi broth
- 2 tablespoons of soy sauce
- 1 tablespoon of mirin
- 2 green onions, thinly sliced
- 1 sheet of nori seaweed, cut into small pieces
Instructions
- Boil the soba noodles according to the package instructions. Drain and rinse with cold water, then set aside.
- Rehydrate the dried mozuku seaweed in a bowl of water for about 5 minutes, then drain and set aside.
- In a pot, bring the dashi broth to a simmer over medium heat. Add the soy sauce and mirin, then stir to combine.
- Add the rehydrated mozuku seaweed to the pot and simmer for 2-3 minutes.
- Divide the cooked soba noodles into serving bowls, then ladle the hot soup over the noodles.
- Garnish with sliced green onions and nori seaweed pieces before serving.
