Mozuku Seaweed Soba Soup (もずくそばスープ)

Ingredients

  • 2 bundles of soba noodles
  • 1 pack of dried mozuku seaweed
  • 4 cups of dashi broth
  • 2 tablespoons of soy sauce
  • 1 tablespoon of mirin
  • 2 green onions, thinly sliced
  • 1 sheet of nori seaweed, cut into small pieces

Instructions

  1. Boil the soba noodles according to the package instructions. Drain and rinse with cold water, then set aside.
  2. Rehydrate the dried mozuku seaweed in a bowl of water for about 5 minutes, then drain and set aside.
  3. In a pot, bring the dashi broth to a simmer over medium heat. Add the soy sauce and mirin, then stir to combine.
  4. Add the rehydrated mozuku seaweed to the pot and simmer for 2-3 minutes.
  5. Divide the cooked soba noodles into serving bowls, then ladle the hot soup over the noodles.
  6. Garnish with sliced green onions and nori seaweed pieces before serving.
