Mozuku Seaweed Soup (もずくスープ)

Ingredients

  • 500g fresh mozuku seaweed
  • 1 liter water
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 green onion, thinly sliced

Instructions

  1. Soak the fresh mozuku seaweed in water for 5 minutes, then drain and rinse well.
  2. In a pot, bring 1 liter of water to a boil.
  3. Add the soaked mozuku seaweed to the boiling water and cook for 10 minutes.
  4. Stir in the soy sauce, rice vinegar, sugar, and salt.
  5. Simmer for an additional 5 minutes.
  6. Remove from heat and garnish with sliced green onions.
