Ingredients

  • 4 chicken thighs
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup honey
  • 1/2 cup water
  • 1/2 cup green olives
  • 2 tablespoons chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs with salt and pepper.
  2. In a large tagine or deep skillet, heat some olive oil over medium heat.
  3. Add the chicken thighs and brown on both sides, then remove from the tagine and set aside.
  4. In the same tagine, sauté the onion and garlic until softened.
  5. Add the ginger, turmeric, cinnamon, cumin, cloves, and nutmeg. Cook for 1-2 minutes until fragrant.
  6. Return the chicken thighs to the tagine and add the honey and water. Stir to combine.
  7. Cover and simmer for 45-50 minutes, or until the chicken is cooked through and tender.
  8. Stir in the green olives and cook for an additional 5 minutes.
  9. Sprinkle with chopped cilantro before serving.
