Mrouzia (tunisian Spiced Lamb Tagine)
Mrouzia is a traditional Tunisian dish that features tender, spiced lamb cooked in a flavorful tagine. This dish is rich in warm spices and sweet flavors, making it a perfect choice for a special occasion or a festive meal.
Ingredients
- 2 lbs lamb, cut into chunks
- 1 cup chopped onions
- 1 cup dried apricots
- 1 cup blanched almonds
- 1/2 cup honey
- 2 tsp ground ginger
- 2 tsp ground cinnamon
- 1/2 tsp ground turmeric
- 1/2 tsp ground black pepper
- 1/4 tsp ground cloves
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cardamom
- 1/4 tsp saffron threads
- 2 cups chicken broth
- 2 tbsp olive oil
- Salt to taste
Instructions
- In a large tagine or Dutch oven, heat the olive oil over medium heat. Add the chopped onions and cook until softened.
- Add the lamb chunks to the tagine and brown on all sides.
- Stir in the ginger, cinnamon, turmeric, black pepper, cloves, nutmeg, and cardamom, coating the lamb evenly with the spices.
- Add the saffron threads and pour in the chicken broth. Bring to a simmer, then reduce the heat and cover the tagine.
- Cook the lamb for 1.5 hours, or until tender, stirring occasionally.
- Add the dried apricots, blanched almonds, and honey to the tagine. Continue to cook for an additional 30 minutes, allowing the flavors to meld together.
- Season with salt to taste and serve the Mrouzia hot, with couscous or crusty bread.
