Ingredients

  • 2 lbs lamb, cut into chunks
  • 1 cup chopped onions
  • 1 cup dried apricots
  • 1 cup blanched almonds
  • 1/2 cup honey
  • 2 tsp ground ginger
  • 2 tsp ground cinnamon
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground black pepper
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cardamom
  • 1/4 tsp saffron threads
  • 2 cups chicken broth
  • 2 tbsp olive oil
  • Salt to taste

Instructions

  1. In a large tagine or Dutch oven, heat the olive oil over medium heat. Add the chopped onions and cook until softened.
  2. Add the lamb chunks to the tagine and brown on all sides.
  3. Stir in the ginger, cinnamon, turmeric, black pepper, cloves, nutmeg, and cardamom, coating the lamb evenly with the spices.
  4. Add the saffron threads and pour in the chicken broth. Bring to a simmer, then reduce the heat and cover the tagine.
  5. Cook the lamb for 1.5 hours, or until tender, stirring occasionally.
  6. Add the dried apricots, blanched almonds, and honey to the tagine. Continue to cook for an additional 30 minutes, allowing the flavors to meld together.
  7. Season with salt to taste and serve the Mrouzia hot, with couscous or crusty bread.
