Ingredients

  • 2 cups dried chickpeas, soaked overnight
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/4 cup tahini
  • 1/4 cup lemon juice
  • Salt to taste
  • Water

Instructions

  1. Drain the soaked chickpeas and rinse them under cold water.
  2. In a large pot, sauté the onion and garlic until they are soft and translucent.
  3. Add the chickpeas, cumin, paprika, and cayenne pepper to the pot. Stir well to coat the chickpeas with the spices.
  4. Pour enough water into the pot to cover the chickpeas by about 2 inches. Bring the mixture to a boil, then reduce the heat and let it simmer for about 1 hour, or until the chickpeas are tender.
  5. Once the chickpeas are cooked, stir in the tahini and lemon juice. Season with salt to taste.
  6. Serve the msabbaha hot, garnished with a drizzle of olive oil and a sprinkle of chopped parsley.
