Msabbaha (damascus-style Chickpea Stew)
Msabbaha is a traditional Syrian chickpea stew that is popular in Damascus. It is a comforting and flavorful dish that is perfect for a hearty meal.
Ingredients
- 2 cups dried chickpeas, soaked overnight
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1/4 cup tahini
- 1/4 cup lemon juice
- Salt to taste

Instructions
- Drain the soaked chickpeas and rinse them under cold water.
- In a large pot, sauté the onion and garlic until they are soft and translucent.
- Add the chickpeas, cumin, paprika, and cayenne pepper to the pot. Stir well to coat the chickpeas with the spices.
- Pour enough water into the pot to cover the chickpeas by about 2 inches. Bring the mixture to a boil, then reduce the heat and let it simmer for about 1 hour, or until the chickpeas are tender.
- Once the chickpeas are cooked, stir in the tahini and lemon juice. Season with salt to taste.
- Serve the msabbaha hot, garnished with a drizzle of olive oil and a sprinkle of chopped parsley.
