Ingredients

  • 2 cups dried chickpeas, soaked overnight
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 2 tomatoes, diced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/4 cup olive oil
  • Salt to taste
  • Water

Instructions

  1. Drain and rinse the soaked chickpeas.
  2. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  3. Add the diced tomatoes, cumin, paprika, and cayenne pepper. Cook for a few minutes until the tomatoes start to break down.
  4. Add the chickpeas to the pot and enough water to cover them by about 2 inches. Bring to a boil, then reduce the heat and simmer for about 1 hour, or until the chickpeas are tender.
  5. Season with salt to taste.
  6. Serve the msabbaha hot, garnished with a drizzle of olive oil and a sprinkle of additional cumin and paprika if desired.
