Ingredients
- 2 cups dried chickpeas, soaked overnight
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 2 tomatoes, diced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1/4 cup olive oil
- Salt to taste

Instructions
- Drain and rinse the soaked chickpeas.
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the diced tomatoes, cumin, paprika, and cayenne pepper. Cook for a few minutes until the tomatoes start to break down.
- Add the chickpeas to the pot and enough water to cover them by about 2 inches. Bring to a boil, then reduce the heat and simmer for about 1 hour, or until the chickpeas are tender.
- Season with salt to taste.
- Serve the msabbaha hot, garnished with a drizzle of olive oil and a sprinkle of additional cumin and paprika if desired.
